Jaywalk Heirloom Rye Whiskey – Cask Strength
Jaywalk Heirloom Rye is the purest expression of Horton, a historic New York rye variety brought back from just ten surviving seeds.
Each bottle comes from one hand-selected barrel, typically aged for eight or nine years and bottled at cask strength. The whiskey enters the barrel at 115 proof, or 57.5% ABV, before years of maturation create an expression unique to that individual cask.
The mash bill is 75% Horton rye, 13% New York corn and 12% malted barley.

FLAVOR PROFILE
Robust, rich and unmistakably rye.
A rich nose of malty cocoa, nutmeg and allspice opens into fresh golden apple and soft marshmallow sweetness.
The palate brings together brown bread, vanilla and tart fruit before developing into a long, warming rye-spice finish. Every single barrel has its own character, so the precise flavor and intensity will vary between releases.

Single barrel
One barrel. Never repeated.
Every bottle of Jaywalk Heirloom comes from one individually selected barrel.
Years of maturation shape each barrel differently. Its final proof, flavor and character belong to that barrel alone.
You will never taste another whiskey exactly like it.

The grain
The long project, bottled.
Horton rye was once grown in New York before disappearing from commercial cultivation for more than a century.
New York Distilling Company began with just ten surviving seeds. Thirteen years of patient cultivation produced enough grain to distill.
Jaywalk Heirloom is the clearest expression of that work, made with 75% Horton rye and drawn from one carefully selected barrel.

From barrel to bottle
Entered at 115 proof. Bottled at cask strength.
The whiskey enters a new charred oak barrel at 115 proof, or 57.5% ABV.
After eight or nine years of maturation, each barrel is tasted and selected individually. The whiskey is then bottled at its natural cask strength.
Because every barrel develops differently, the final proof and flavor can vary from one release to the next.
